Parmesan Roasted Delicata
A simple, kid-friendly way to enjoy seasonal squash.

- 1 medium-sized delicata squash
- 2 tsp olive oil
- 1/4 tsp kosher salt
- 1/4 tsp garlic powder
- 2 Tbsp grated Parmesan cheese
Oven Roasted
Heat the oven to 425 degrees. Line a sheet pan with parchment paper or grease lightly with oil spray.
Wash the outside of the squash really well then dry with a clean towel. Slice the ends off of the squash then carefully cut in half lengthwise. Scoop out the seeds from the center. Place the squash cut-side down then slice across into 1/4-inch half circles.
Place all of the cut squash into a large bowl. Drizzle with oil then sprinkle with the salt, garlic powder, and cheese. Stir to coat the squash in all of the seasonings.
Line the squash up in a single layer on the sheet pan.
Roast the squash until golden brown, 15 to 20 minutes, flipping the peices halfway through cooking time. Serve!
Air Fryer

Place the squash into your air fryer. Cook on 400 degrees, shaking every 5 minutes, until the squash is golden brown all over, about 15 minutes total. Serve!
