Honey Garlic Balsamic Marinade

A super flavorful, easy boost for chicken, pork, and veggies

Ingredients
  

  • 4 cloves garlic
  • 2 Tbsp dijon mustard
  • 1 Tbsp honey
  • 1 tsp dried Italian seasoning/herbs
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1/4 cup balsamic vinegar
  • 1/4 cup extra virgin olive oil

Instructions
 

  • Use a microplane grater or garlic press to finely grate the garlic/make into a paste.
  • Mix the garlic and remaining ingredients in a large bowl or baking dish (whatever you want to marinade the food in). If marinading meat and veggies, divide the marinade into separate dishes.
  • Add the chicken/pork chops/veggies to the marinade and toss will to coat. Leave the food to marinate for 20 to 30 minutes at room temperate or cover and refrigerate for up to 2 hours. (Because the marinade contains a good amount of vinegar, you don't want to marinade meat for more than 2 hours or the texture will change.)
  • Grill the meat/veggies. Make sure you watch the heat and lower it as needed because the marinade has honey and can easily burn before the food is cooked through.

Notes

This marinade is a good amount for 1 1/2 to 2 pounds of meat. I really like to use chicken breast and thighs. Pork chops also work really well in this marinade.
For veggies, I like to marinade portobello mushrooms, zucchini, summer squash, asparagus, and many more.
If you don't like mustard, you can use less (make 1 tsp) for a more mild taste or omit it entirely if you prefer.
