Pizza Mummies with Veggie Sauce

A fun an yummy snack, lunch, or spooky dinner that kids can make!

Ingredients
  

  • 2 whole wheat or regular English muffins, split in half
  • 1/2 cup pizza or marinara sauce
  • 1/2 cup broccoli florets frozen and defrosted or fresh and steamed
  • 2 Tbsp pumpkin or squash puree or any veggies you want (see below for examples)
  • 4 string cheese (mozzarella cheese sticks)
  • sliced black or pimento stuffed olives

Instructions
 

  •  Heat the oven to 400 degrees. Place English muffin halves on a baking sheet and bake for 5 minutes to toast.
  • Finely chop the broccoli then add to the pizza sauce along the pumpkin (or whatever veggies you choose). Stir to combine.
  • Remove the English muffins from the oven and spread a heaping spoonful of sauce onto each half. Peel cheese sticks into strings and arrange them on top of each English muffin like mummy bandages. Place 2 olive halves on top of the cheese to create eyes.
  • Bake for 3 minutes or until cheese is melted. Enjoy!

Notes

 
*You can add any veggies you have to the sauce. I've done finely chopped baby spinach, grated carrot, finely chopped peppers, etc.
**If you don't want to use olives for the eyes, you can cut any other veggie, such as carrots, cucumber, or peppers, into a small circle shape.
***You can also cook these pizzas in an air fryer. Toast the English muffins at 375 for 3 minutes then cook at 375 until the cheese is melted, 2 to 3 more minutes.
