Cuisine American
- 2 whole wheat or regular English muffins, split in half
- 1/2 cup pizza or marinara sauce
- 1/2 cup broccoli florets frozen and defrosted or fresh and steamed
- 2 Tbsp pumpkin or squash puree or any veggies you want (see below for examples)
- 4 string cheese (mozzarella cheese sticks)
- sliced black or pimento stuffed olives
Heat the oven to 400 degrees. Place English muffin halves on a baking sheet and bake for 5 minutes to toast.
Finely chop the broccoli then add to the pizza sauce along the pumpkin (or whatever veggies you choose). Stir to combine.
Remove the English muffins from the oven and spread a heaping spoonful of sauce onto each half. Peel cheese sticks into strings and arrange them on top of each English muffin like mummy bandages. Place 2 olive halves on top of the cheese to create eyes.
Bake for 3 minutes or until cheese is melted. Enjoy!
*You can add any veggies you have to the sauce. I've done finely chopped baby spinach, grated carrot, finely chopped peppers, etc.
**If you don't want to use olives for the eyes, you can cut any other veggie, such as carrots, cucumber, or peppers, into a small circle shape.
***You can also cook these pizzas in an air fryer. Toast the English muffins at 375 for 3 minutes then cook at 375 until the cheese is melted, 2 to 3 more minutes.
