First, I’m not complaining! Second, this is some First, I’m not complaining!
Second, this is something I have to remind myself of all the time.
We went to Japan back in March and I got so many messages about my kids trying all of the food. I often replied “yes, but they refuse to eat a lot of things too…especially at home.”
The other day I made a simple, delicious lasagna and one of my kids through a fit about eating it. I was so annoyed 😠 🤣
But we all have preferences. Even my kids that love trying new foods sometimes refuse to eat certain things.
What helps my kids feel adventurous outside of the home?
-it’s something we prioritize as a family (but it’s ok if you don’t)
-we’ve always let them make a lot of choices about what they eat. I think the freedom helps them want to push their boundaries when it comes to food.
-we get excited to learn about other cultures and foods. It’s never weird or gross. It’s cool.
Those are my 2 cents.
Hope it’s a little helpful just to see that all kids refuse to eat one thing or another.

🥒Have a little bit of zucchini that’s not goi 🥒Have a little bit of zucchini that’s not going to get eaten or some that’s about to go bad?? Chop and freeze then use in smoothies! Think of them like nutritious ice cubes. They are great in really any kind of smoothies, but I particularly like them in this Chocolate Protein Smoothie. It has banana, tofu, and cocoa powder (sounds crazy but it’s so creamy and delicious!). The full recipe is in my free guide, Smoothie Lab. Comment Link and I’ll send it your way!!

🌿 lemony basil pesto:
5-6 cups fresh basil leaves
1 small garlic clove (I sometimes sauté it in a little oil first to make the garlic less intense)
1/3 cup toasted sliced almonds (or any nut or omit to make it nut free)
1/2 lemon (I like a lot of lemon juice in this but add to taste)
1/2 tsp salt
Pinch of sugar (optional but I think it mellows out the peppery bite of the basil)
1/3 cup extra virgin olive oil 
2 tbsp water
1/4 cup grated Parmesan cheese
Blend everything together except the cheese until creamy and smooth. Add the cheese and blend again briefly. Add more salt and lemon juice to taste.

These Sugar Cookie Bars…the Fruit Pizza from my cookbook, Kid Kitchen, but with a tweaks for the holiday!🫐🍓
This recipe is so so easy to make. Kids can do it themselves or with just a little help! (Or I give you full permission to make it without kids too 😉)
Mix together the simple cookie dough, press it into a pan, then make a cream cheese frosting and top with fruit.
I used a square pan instead of the round pizza shape, so the dessert was easier to pick up at a party. You could also double the recipe and bake in a 9-by-13 pan.
You can sweeten the frosting with maple syrup or powdered sugar, and use whatever fruit you want. The bars are best chilled and served cold.

This giant pancake makes breakfast into an instant party 🎉
🥞The full sheet pan recipe easily serves a crowd (without having to stand at the stove for an hour!). However, like I did for this video, you can halve the recipe and bake in a 1/4 sheet pan or a 9x13 baking dish if you have a smaller group to feed (3 to 4 people).

🍓🫐Not celebrating the 4th of July? No worries! You can top the pancake batter however you’d like…with any kind of fruit, chocolate chips, coconut, chopped nuts, etc. I like to divide up the pan and give each family member a quadrant of the pan to decorate as they please. It’s so fun for kids!

Will give a description for each meal but please let me know if you have any questions!
🍔 Monday: Asian-inspired burgers (a mix of ground chicken and pork, grated carrot, lots of cilantro, garlic and ginger, teriyaki sauce), air fried sweet potatoes and yellow potatoes, grilled sugar snap peas 🫛, burgers topped with spicy mayo and avocado.
🍤Tuesday: Chilled Shrimp Rolls (inspired by a recipe by @haileecatalano ), corn on the cob with Old Bay butter, celery and tomato salad. Will def be making those shrimp rolls again!
🍜Wednesday: Rice noodle bowls with lemongrass marinated chicken thighs, cucumber, snap peas, carrot, cilantro, mint, basil, and a peanut sauce. Inspired by a recipe on recipe to eats.com (google Vietnamese noodles with lemongrass chicken). We took these to the beach and I wrapped the ingredients up in rice paper wrappers for the kids.
🍝Lasagna Rolls with veggie packed meat sauce: was craving some cheesy pasta on a rainy day. Cooked lasagna sheets then rolled them with ricotta, chopped baby spinach, garlic powder, and mozzarella, added shredded zucchini and carrot to browned ground beef and added a jar of marinara sauce. Cucumber, tomato, and olive salad.
🇰🇭 Friday: Cambodian restaurant. So yummy!
