Parmesan Roasted Delicata (aka Squash “Smiles”)

Need a simple way to prepare seasonal squash that kids will love too? You have to try this Parmesan Roasted Delicata Squash! I created this recipe to make in my kids cooking classes as a fun way to introduce them to seasonal, fall vegetables. Since the squash is cut into half-circle rings, we turn them up to create little “smiles”.  Add some cheese then roast up until crunchy They are so yummy!

Kids in the Kitchen:

  • Precut squash: Delicata is hard to cut trough, so I recommend cutting off the ends then cutting them down the center lengthwise before having kids help with the remaining steps.
  • Scoop seeds: Once you cut the squash down the center lengthwise, kids can help scoop out the seeds with a spoon.
  • Measure, add, stir: There are only a few ingredients in this recipe, so kids can easily practice measuring with measuring spoons. They can then add everything to a large bowl and toss everything together with a spoon.

Subs and Tips for Making Parmesan Roasted Delicata:

  • Buying Delicata squash: Delicata squash can vary slightly in size, so if you are cooking more than one, buy some that are similar in diameter. That way they cook in the same amount of time. Find squash that is pretty smooth on the outside since we are going to cook and eat the skin.
  • Dairy-free: You can omit the cheese in this recipe, and the squash will still be delicious. If you still want that cheesy flavor, toss the cooked squash in a tablespoon or so of nutritional yeast.
  • Make ahead: You can prep and slice the squash a day ahead of time and store in a zip-top bag. 

Parmesan Roasted Delicata

Ingredients
  

  • 1 medium-sized delicata squash
  • 2 tsp olive oil
  • 1/4 tsp kosher salt
  • 1/4 tsp garlic powder
  • 2 Tbsp grated Parmesan cheese

Instructions
 

Oven Roasted

  • Heat the oven to 425 degrees. Line a sheet pan with parchment paper or grease lightly with oil spray.
  • Wash the outside of the squash really well then dry with a clean towel. Slice the ends off of the squash then carefully cut in half lengthwise. Scoop out the seeds from the center. Place the squash cut-side down then slice across into 1/4-inch half circles.
  • Place all of the cut squash into a large bowl. Drizzle with oil then sprinkle with the salt, garlic powder, and cheese. Stir to coat the squash in all of the seasonings.
  • Line the squash up in a single layer on the sheet pan.
  • Roast the squash until golden brown, 15 to 20 minutes, flipping the peices halfway through cooking time. Serve!

Air Fryer

  • Wash the outside of the squash really well then dry with a clean towel. Slice the ends off of the squash then carefully cut in half lengthwise. Scoop out the seeds from the center. Place the squash cut-side down then slice across into 1/4-inch half circles.
  • Place all of the cut squash into a large bowl. Drizzle with oil then sprinkle with the salt, garlic powder, and cheese. Stir to coat the squash in all of the seasonings.
  • Place the squash into your air fryer. Cook on 400 degrees, shaking every 5 minutes, until the squash is golden brown all over, about 15 minutes total. Serve!
