Crunchy Roasted Peas or Edamame (Air Fryer or Oven)

Sometimes changing the texture of a veggie makes it more appealing for kids (and adults too!). Crunchy Roasted Peas or Edamame is a healthy snack snack that makes vegetables fun and delicious. Plus, with only 3 ingredients, they couldn’t be easier to make. You can make these crispy peas or edamame in the air fryer or in the oven.

Kids in the Kitchen:

  • Measure and Pour: Kids can measure the 2 cups of peas and add them to a bowl.
  • Season and Mix: Help kids press the nozzle to give the peas a quick squirt of oil. Also, practice that “chef sprinkle” by taking a pinch of salt, placing your hand high above the bowl, and letting the salt “rain” down on all the peas to season them evenly. Kids can then take a spoon and give it a good mix.
  • Taste test: Take some peas out of the air fryer/oven to cool a little, then kids can taste them and see if they are crunchy enough or if they need more salt/seasoning.

  • Peas/Edamame: Regular (not petite) peas work best for this recipe. You can often find shelled edamame in the freezer sections of grocery stores like Trader Joe’s and Whole Foods.

  • Seasoning ideas: Simple salt is a great seasoning for these crunchy roasted peas. However, if you want to get creative, there are lots of options. Some things I’ve tried are ranch seasoning, garlic powder, chili powder, or furikake (sesame seaweed seasoning).
  • Cook times may vary: All air fryers and ovens are slightly different. Make sure to check the peas/edamame often, and cook longer if needed. If you want very crispy peas, cook them at a lower temperature for longer. However, I enjoy when they are crunchy on the outside and tender in the center.

Ingredients
  

  • 2 cups frozen peas or edamame, defrosted
  • oil spray or 1/2 tsp avocado/olive oil
  • big pinch kosher salt
  • optional seasoning: Ranch seasoning, furikake, garlic powder, taco seasoning, to taste

Instructions
 

  • Pat the peas or edamame dry with a kitchen towel or paper towels.
  • Spray the peas/edamame with oil and sprinkle with salt and any seasonings you'd like. Stir to coat.
  • For air fryer: Add the peas/edamame to the air fryer basket. (If the insert has large holes that the peas will fall through, you can line the pan with foil first.) Cook at 350 degrees until peas are browned and crispy, about 15 minutes, shaking the pan every 5 minutes or so. The edamame might take a little longer, so taste and cook for more time as needed.
  • For the oven: Heat the oven to 350 degrees. Line a sheet pan with foil for easy clean-up. Spread the peas/edamame into an even layer. Roast until golden brown and crispy, about 20 minutes, stirring the pan every 5 minutes or so. (The outer edges of the pan will cook faster, so it's important to mix them to cook evenly.) The edamame might take a little longer, so taste and cook for more time as needed.
  • The crunchy peas/edamame can be stored in an airtight container at room temperature for a few days.
