Recipes to Cook with Kids in March
Lots of fun, colorful ideas are in this month’s Recipes to Cook with Kids. Included below are yummy breakfast ideas, baked goods like muffins and blondies, and many dinners that get kids in the kitchen. These recipes aren’t just great for celebrating St. Patrick’s Day, but really, colorful and greens recipes are fun any day of the week.
FUN Breakfast and Baked Good Recipes to Cook with Kids:
Banana Protein Muffins: This healthy muffin recipe is going to become your new go-to way to use up those overripe bananas. They are super easy to make and filled with wholesome ingredients to keep little bellies full and happy. Banana Protein Muffins are packed with plant-based protein and fiber thanks to lentils. But I promise you can’t taste the lentils at all! Bake up these muffins with your kiddos and enjoy them for breakfast, snack, or pack them up for school.
Tie Die Sheet Pan Pancake: Use your favorite pancake mix or my easy Whole Wheat Pancake recipe, add some natural food die, and you have the most fun and easy breakfast. The full instructions are in my Instagram video HERE.
Rainbow Fruit Skewers: Get a variety on fruit and let kids practice their knife skills by chopping it up into bite-sized pieces. Then have kids place it on skewers to make a sweet and colorful snack. You can see how I set everything up in the Instagram video HERE. (and some cute little gold corn pancakes too)
Cottage Cheese Bagel Bites: You will not believe how easy these 4-Ingredient little bagel rounds are to make! All you need is flour, baking powder, salt, and cottage cheese! Bake them up in the oven or the air fryer. Also, I highly recommend stuffing the Cottage Cheese Bagel Bites with cream cheese for the ultimate homemade bagel treat. Top them with everything bagel seasoning or just some salt. Kids and adults will enjoy bagel bites for breakfast or snacks.
Almond Butter Birthday Bake Blondies: You won’t believe how easy it is to make these Almond Butter Birthday Cake Blondies. They are gluten-free, grain-free, dairy-free, and easily made egg-free too. Rainbow sprinkles make this wholesome treat taste like birthday cake. However, you can easily add in or replace them with chocolate chips if you’d like a more classic blondie. Kids are going to love getting into the kitchen to make these healthier blondies with you!
I made DINNER!
Superhero Mac and Cheese: No flour, high in protein, and packed with veggies, this Superhero Mac and Cheese makes kids and parents very happy. Greek yogurt gives the sauce a creamy texture and nutritious boost. Plus, the cheesy pasta dish is only made with 5 simple ingredients you probably already have on hand. Have your kiddo get into the kitchen and blend up the super green sauce with you. Although it’s packed with spinach, your toddler or big kid won’t even taste it.
Rainbow Pizza Bagels: Want to get more veggies into the day and have fun in the kitchen at the same time? These Rainbow Bagel Pizzas are the ultimate healthy recipe to cook with kids. Of course, you don’t need every color or vegetable option for your pizzas –two or three colors are great. Plus, I included a recipe for a quick, no-cook pizza sauce that also has vegetables stirred right in. Chewy, delicious, whole wheat bagels make the perfect canvas for sauce, beautiful veggies, and melty cheese.
Turkey and Veggie Shepherd’s Pie: This easy weeknight dinner is the ultimate healthy comfort food. My Turkey and Veggie Shepherd’s Pie is packed with 4 different vegetables and crowned with a light and fluffy potato topping. The turkey filling is savory, flavorful and hearty without being too heavy. You can make it super easy and cook up and save the whole dish in a skillet. Or you can make it a little fancy and bake up the pies in little individual ramekins. Either way, your family is going to request this meal over and over again.
Rainbow Noodles Bowls: A nutritious weeknight dinner that will make the whole family happy! Rainbow Noodle Bowls are easy to customize, full of colorful veggies, and drizzled with the most delicious, easy sauce. Have a “picky” eater in the house? Don’t worry, I’ve included lots of tips below for helping the most finicky toddlers enjoy this meal too. Plus, if kids help prep the veggies or stir the sauce together, they are much more likely to be excited about eating the meal too.
Creamy Salsa Verde Enchiladas: I first came up with this dinner to use up leftover chicken or beans that I had in my fridge. It soon became one of our favorite weeknight meals and checked all the boxes. It’s a meal that’s nutritious, satisfying, and quick to throw together. Plus, my husband and two boys happily gobble it up since the 2-ingredient sauce is mild but flavorful. Hope you enjoy these Creamy Salsa Verde Enchiladas as much as we do!
