Recipes to Cook with Kids in May
May is a whirlwind of school events, sports, and sunshine (and rain too). Life is busy, but I encourage you find a little time to slow down in the kitchen. This list of Recipes to Cook with Kids in May has you covered with simple breakfasts, fun snacks, and fresh dinners that are perfect for spring.
Breakfast Recipes to Cook with Kids in May
Strawberry Breakfast Cookies: This easy, one-bowl recipe is nutritious enough for breakfast but so delicious you’ll want them all day. Strawberry Breakfast Cookies combine sweet strawberries and whole grain oats in a handheld cookie form. The healthy cookies also happen to be vegan, nut-free, and can easily be made gluten-free too.
Sheet Pan Hash Browns and Eggs: a complete and balanced meal on one pan. It’s even easier when you use frozen shredded potatoes and some chicken breakfast sausages. Make it for breakfast, brunch, or a fun breakfast-for-dinner!
Omelet Bagel Boats: A fun and healthy breakfast that the whole family will love! These Breakfast Bagel Boats are like a bagel stuffed with an omelette. Hollow out a bagel, pick your toppings.. spinach, peppers, tomatoes, bacon, ham, whatever you like, then pour in some beaten egg and bake. Kids will love to help make and eat this yummy bagel upgrade!
Higher Protein Banana Pancakes: naturally sweetened, dairy-free, and full of protein and healthy fat from nut or seed butter. The recipe is so easy! You just throw everything into a blender so it’s perfect for kids to help too. I like placing a few slices of banana right on top of each pancake before flipping. The bananas get so sweet and caramelized, but that’s totally optional of course. Add a drizzle of peanut butter and maple syrup and this breakfast will feel like a special treat.
Snack Recipes to Cook with Kids:
Fruit and Veggie Flower Toasts: A fun Snack-tivity that helps kids get hands-on experience with more fruits and veggies. I like to use whole wheat toast, cream cheese, and whatever fruits and veggies I have on hand. Have kids help wash and cut the produce, They can also help spread the cream cheese on the bread then decorate the toasts as they please. Make sure you work on your own creations and model how you taste and have fun with the food too. Mix things up and use peanut butter or hummus on the bread.
Cheeseburger Biscuit Pockets: Great for lunch boxes or to eat anytime of day, these cheesy, ground meat, and veggie stuffed biscuits will be a hit with kids and adults. Cheeseburger Stuffed Biscuits are my newest filled biscuit creations. There is also a BBQ Chicken version in my cookbook, Kid Kitchen, and well as a breakfast version HERE, and an apple pie one HERE.
Monster Cookie Energy Balls: Snack time will never be boring when you make these Monster Cookie Energy Balls. Another sneak peek recipe from my cookbook, Kid Kitchen! Super easy to stir together and customize, kid chefs will be making these on repeat.
Fresh and Easy Dinner Recipes:
Lemon Garlic Chicken Pitas/Salads: This Slow Cooker Lemon Garlic Chicken is the ultimate base for easy weeknight dinners. You can use the tender, flavorful shredded chicken in sandwiches, on top of salad, mixed into pasta sauce, and more! I even like to use the cooking juices and leftover chicken to make a delicious soup. There are so many ways to make this chicken into a healthy meal the whole family will enjoy.
Cobb Salad Bar with Strawberry Dressing: Salad night the whole family will enjoy? Yes! This Grilled Chicken Cobb Salad is an easy and healthy summer dinner that adults, kids, and toddlers can all eat together. The sweet and savory strawberry dressing is also a fantastic flavor addition. However, you can use any homemade or store bought salad dressing that you like. The salad toppings are very versatile too –use leftover cooked chicken (or any protein) and whatever cheeses and veggies you have on hand.
Chicken Fajita Burrito Bowls: a veggie-packed, easy dinner that kids can make themselves (or with just a little help). Set out all the toppings and everyone is the family can design their own colorful burrito bowls. It’s a recipe that will make you skip the takeout spot and make a meal together at home. This is a sneak peek recipe from my new kids cookbook, Kid Kitchen!
