Mint Chocolate Chip Smoothie: I love making this recipe during the holiday season with my kids cooking class. It’s easy, festive, and packed full of nutritious ingredients. You can make it with fresh mint leaves (fun to introduce those to kids) or peppermint extract. Sometimes I even add a little whipped cream on top to make it an extra special treat. Here’s the recipe: 1 frozen banana, 1/2 ripe avocado, 1 cup baby spinach, 3 to 4 fresh mint leaves (or 1/8 tsp peppermint extract), 1 cup milk (any kind), 1 cup ice cubes, and 1 tablespoon mini chocolate chips. Blend everything in a high speed blender until smooth. Add more ice or milk as needed.
