Rainbow Recipes: Mains, Salads + Sides

Rainbow Bagel Pizzas

Want to get more veggies into the day and have fun in the kitchen at the same time? These Rainbow Bagel Pizzas are the ultimate healthy recipe to cook with kids. Of course, you don’t need every color or vegetable option for your pizzas –two or three colors are great. Plus, I included a recipe for a quick, no-cook pizza sauce that also has vegetables stirred right in. Chewy, delicious, whole-wheat bagels make the perfect canvas for sauce, beautiful veggies, and melty cheese.

Rainbow Pasta Salad

This simple, fresh, and delicious Rainbow Pasta Salad is perfect for getting the kids into the kitchen to practice those knife skills. You can use whatever fresh or frozen veggies you have on hand to make a colorful pasta dish the whole family will love. I often make this recipe with my preschool cooking classes. Parents and teachers are always so surprised how much kids are willing to taste when they help make the dish. Even if your little one pushes the veggies aside and only eats the pasta, chopping veggies and learning in the kitchen is still a huge win.

Rainbow Noodle Bowls with Roasted Tofu

A healthy weeknight dinner that will make the whole family happy! Rainbow Noodle Bowls are easy to customize, full of colorful veggies, and drizzled with the most delicious, easy sauce. Have a “picky” eater in the house? Don’t worry, I’ve included lots of tips below for helping the most finicky toddlers enjoy this meal too. Plus, if kids help prep the veggies or stir the sauce together, they are much more likely to be excited about eating the meal too.

Kid-Friendly Chopped Veggie Salad

Cabbage…do you ever buy it? I think it is often forgotten or over looked because we aren’t sure what to do with the crunchy veggie. But I’ve come up with a way to use it that my kids love! Cabbage is very versatile and keeps in the fridge for weeks. You can roast it, sauté it, or chop it up and eat it raw. The key to making this Chopped Cabbage Salad so kid approved is lots of natural sweetness from apple and a touch of honey in the dressing. We love this salad as a side dish to any meal. Whether your child is a fan of crunchy veggies or still learning to like them, I’d definitely get in the kitchen and make this recipe together!

Sesame Noodle Salad (nut-free and gluten-free)

A healthy summer meal or bbq side dish that the whole family will love! This plant based, veggie-packed Sesame Noodle Salad is nut-free, gluten-free, and vegan. Cook your favorite rice noodles, chop up some crunchy veg, and then toss it all in a super flavorful sauce. Pack up this noodle salad for a picnic or a lunch box for a nutritious and refreshing meal.

Rainbow Fried Rice (or Quinoa!)

Rainbow Fried Rice is easy, healthy, delicious, and the perfect recipe to cook with kids. I call this veggie-packed dish *Magical* Rainbow Fried Rice because every time I make it in a cooking class it disappears off kids’ plates. The adults in the room, whether parents or teachers, stare in disbelief as they watch usually “picky” eaters gobbling up the rainbow of veggies and rice. It’s no surprise that kids can be involved in every aspect of this recipe -starting at the store with choosing the veggies to include and helping chop them up at home. Making Rainbow Fried Rice is the best way to expose kids to lots of different veggies in a fun, pressure-free way. I’ve also included a section for MORE tips on making this dish with kids!

Rainbow Veggie Pancakes

Kids love pancakes, so why not take the opportunity to get some veggies in there? These savory little fitters are incredibly easy to mix up and have your child get in on the action. Rainbow Veggie Pancakes are perfect for toddler lunches, snacks, or to keep on hand in the freezer for any meal. They are super popular in my kids’ cooking classes and leave parents happily speechless when their toddlers gobble up all those colorful veggies.

Funfetti Rainbow Sprinkles

Birthday Cake Breakfast Cookies

Kids will love baking and eating these nutritious, fiber-rich cookies that taste like “funfetti” cake! Birthday Cake Breakfast Cookies are a balanced addition to breakfast, snack time, or lunch boxes. You can make the cookies with wheat flour or almond flour to make them gluten-free. They are also easy to make dairy and egg-free.

“Funfetti” Whole Wheat Banana Bread

This Funfetti Whole Wheat Banana Bread is a healthier twist on classic banana bread, made with whole wheat flour and naturally sweet ripe bananas. It’s simple to stir together and packed with colorful sprinkles, making it a fun, kid-friendly baking recipe.

Almond Butter Birthday Cake Blondies

You won’t believe how easy it is to make these Almond Butter Birthday Cake Blondies. They are gluten-free, grain-free, dairy-free, and easily made egg-free too. Rainbow sprinkles make this wholesome treat taste like birthday cake. However, you can easily add in or replace them with chocolate chips if you’d like a more classic blondie. Kids are going to love getting into the kitchen to make these healthier blondies with you!

Healthy Funfetti Muffins

Bite-sized treats perfect for kids snacks, lunch boxes, or to enjoy at home. These Mini Funfetti Muffins are a little more nutritious thanks to whole grains and lower sugar content. However, the little muffins still taste like birthday cake!

High Protein Funfetti Dip

Looking for a snack that’s as fun as it is nutritious? This High Protein Funfetti Fruit Dip (aka healthy “Dunkaroos”) is super easy to make, packed with protein, and perfect for getting kids excited about getting into the kitchen to help. Serve it up with a colorful fruit platter or pack it into individual containers for a festive treat on the go!

Healthy Homemade Popsicles

Does the summer sun have your kiddos screaming “Ice cream!!”? We definitely love a trip to go get the real deal once in a while but having healthier frozen treat options at home is a great way to have a hydrating, sweet dessert without all the added sugar. Because these Healthy Homemade Popsicles are made up of wholesome ingredients (and even veggies!), we often have them for a snack or even breakfast sometimes! Plus, popsicles can be so easy to make ahead and have on hand. Just blend up some ingredients, pour into molds, and freeze. Bonus? All the recipes in the linked post are dairy-free, low in sugar, sweet, and refreshing on a hot day. Healthy treats can still be fun and delicious! Which of these healthy homemade popsicles are you going to try first?
